Özet

Bu çalışmanın amacı; evden ve ev dışından çalışanlarda mobil yemek sipariş uygulamaları kullanımının besin seçimleri, beslenme durumu, vücut kompozisyonu ve iş stresi düzeyleri ile ilişkisini incelemektir. Araştırma, evden ve ev dışından çalışan bireylerin beslenme durumları, besin seçimlerinin; (i) vücut kompozisyonu, (ii) mobil uygulamalar üzerinden sipariş edilen yiyecek/içeceklerin besin ögesi içerikleri, (iii) iş stresi düzeyleri ile ilişkili olduğu hipotezlerine dayalı olarak planlanmıştır. Kesitsel tasarıma sahip bu çalışmaya toplam 176 gönüllü yetişkin birey (evden n=88; ev dışında n=88) dahil edilmiştir. Katılımcıların beslenme durumları ve mobil yemek sipariş uygulamalarını kullanma özellikleri yapılandırılmış anket formu ile değerlendirilmiş; besin tüketimleri, son üç sipariş esas alınarak hesaplanan besin ögesi alımları ile kişilerin ortalama 1 günlük besin tüketim kayıtları değerlendirilmiştir. Bazı vücut kompozisyonu değişkenleri antropometrik ölçümlerle, iş stresi Genel İş Stresi Ölçeği (GİSÖ) ile, sağlıklı beslenmeye ilişkin tutumlar ise Sağlıklı Beslenme ile İlgili Tutum Ölçeği (SBİTÖ) kullanılarak değerlendirilmiştir. Araştırma sonunda, çalışma ortamına göre vücut kompozisyonu değişkenleri karşılaştırıldığında, yalnızca boy uzunluğu evden çalışanlarda anlamlı derecede daha yüksek bulunmuştur (p<0,001). Beden kütle indeksi ortalamaları açısından gruplar arasında anlamlı fark saptanmamakla birlikte (p=0,056), obezite düzeyinde ev dışından çalışan bireylerin BKİ ortalamalarının evden çalışanlara kıyasla anlamlı derecede daha yüksek olduğu belirlenmiştir (p<0,001). Günlük toplam enerji alımı, ev dışından çalışan bireylerde anlamlı düzeyde daha yüksek bulunmuş; bu grupta toplam protein, hayvansal protein, karbonhidrat, toplam posa, çözünmeyen posa ve tekli doymamış yağ asidi alımlarının da evden çalışanlara kıyasla daha yüksek olduğu saptanmıştır (p<0,05). Buna karşın, toplam yağ, doymuş ve çoklu doymamış yağ asitleri, n-3 ve n-6 yağ asitleri, n-6/n-3 oranı ve kolesterol alımları açısından gruplar arasında anlamlı fark bulunmamıştır (p>0,05). Mobil yemek sipariş uygulamalarında her iki grupta da en sık sipariş edilen öğünün akşam yemeği olduğu; stresli durumlarda ise fast-food ürünlerinin öncelikli olarak tercih edildiği belirlenmiştir. Ev dışından çalışan bireylerin iş stresi puanlarının evden çalışanlara kıyasla anlamlı derecede daha yüksek bulunmuştur (p<0,001). Ev dışından çalışanlarda iş stresi düzeyleri ile BKİ, bel çevresi ve kalça çevresi arasında anlamlı ilişkiler bulunurken (p<0,05), evden çalışanlarda bu ilişki belirlenememiştir. SBİTÖ toplam puanı açısından gruplar arasında anlamlı fark bulunmazken, Beslenme Hakkında Bilgi alt boyutu puanları ev dışından çalışan bireylerde daha yüksek bulunmuştur (p=0,02). Sonuç olarak, çalışma ortamının beslenme durumu, besin seçimleri, vücut kompozisyonu ve iş stresi ile ilişkili olduğu; özellikle ev dışından çalışmanın daha yüksek enerji alımı, daha belirgin obezite düzeyi ve artmış iş stresi ile seyrettiği belirlenmiştir. Bulgular, mobil yemek sipariş uygulamalarının çalışan bireylerde beslenme davranışlarını etkileyen önemli bir çevresel faktör olduğunu ve çalışma ortamına özgü, bütüncül beslenme ve stres yönetimi müdahalelerine ihtiyaç bulunduğunu göstermektedir.

The aim of this study was to examine the relationship between the use of mobile food ordering applications and food choices, nutritional status, body composition, and job stress levels among individuals working from home and those working outside the home. The study was planned based on the hypotheses that the nutritional status and food choices of individuals working from home and outside the home are associated with (i) body composition, (ii) the nutrient content of foods and beverages ordered via mobile applications, and (iii) job stress levels. This cross-sectional study included a total of 176 voluntary adult participants (working from home: n=88; working outside the home: n=88). Participants' nutritional status and patterns of mobile food ordering application use were assessed using a structured questionnaire; dietary intake was evaluated based on nutrient intakes calculated from the last three orders placed via mobile applications as well as the participants' average one-day dietary records. Certain body composition variables were assessed through anthropometric measurements, job stress was evaluated using the General Job Stress Scale (GJSS), and attitudes toward healthy eating were assessed using the Healthy Eating Attitude Scale (HEAS). At the end of the study, comparison of body composition variables by work environment revealed that only height was significantly higher among individuals working from home (p<0.001). Although no significant difference was observed between groups in terms of mean body mass index (BMI) (p=0.056), BMI values at the obesity level were found to be significantly higher among individuals working outside the home compared with those working from home (p<0.001). Daily total energy intake was significantly higher among individuals working outside the home; in this group, total protein, animal protein, carbohydrate, total dietary fiber, insoluble fiber, and monounsaturated fatty acid intakes were also higher compared with those working from home (p<0.05). In contrast, no significant differences were found between groups in terms of total fat, saturated and polyunsaturated fatty acids, n-3 and n-6 fatty acids, the n-6/n-3 ratio, or cholesterol intake (p>0.05). In both groups, dinner was identified as the most frequently ordered meal via mobile food ordering applications, while fast-food items were preferentially chosen during stressful situations. Job stress scores of individuals working outside the home were significantly higher than those of individuals working from home (p<0.001). Among individuals working outside the home, significant associations were observed between job stress levels and BMI, waist circumference, and hip circumference (p<0.05), whereas no such relationships were identified among those working from home. Although no significant difference was found between groups in terms of total HEAS score, the Nutrition Knowledge subscale scores were higher among individuals working outside the home (p=0.02). In conclusion, the work environment is associated with nutritional status, food choices, body composition, and job stress; working outside the home, in particular, is characterized by higher energy intake, a more pronounced level of obesity, and increased job stress. The findings indicate that mobile food ordering applications constitute an important environmental factor influencing dietary behaviors among working individuals and highlight the need for work environment–specific, comprehensive nutrition and stress management interventions.
