This research was carried out on Eşme, Çukurgöbek quince and Starkspur Golden Delicious, Starkrimson Delicious apple cultivars, in order to determine changes in internal (İE) and external (DE) ethylene, ACC-O enzyme activity, respiration rate (RR), sucrose, glucose and fructose contents, citric and malic acid contents during' preharvest development stage of fruits, and also in weigth loss, fruit taste, fruit flesh browning during normal and controlled atmosphere storage (%202+%3C02) and ripening periods in Ankara University Faculty of Agriculture Department of Horticulture between 1996-1997. İE levels changed between 0.1-1.7 ul/1 and 0.2-4.7 ul/1, DE levels 0.0-1.8 ul/kg/h and 0.0-2.4 ul/kg/h, ACC-O activity 0.0-0.9 ul/1 and 0.0-1.9 ul/1, respectively, in Eşme and Çukurgöbek quince cultivars during preharvest development stage. İE levels were determined between 0.0-2.7 ul/I and 0.0-2.0 ul/1, DE levels 0.1-5.1 ul/kg/h and 0.0-2.4 ul/kg/h, ACC-O activity 0.0-1.3 ul/1 and 0.0-0.8 ul/1 ranges, respectively, in Starkspur Golden Delicious and Starkrimson Delicious cultivars. A clear ethylene climacteric which was paralell with RR levels was not observed for both fruit species and this stage. However these parameters increased during storage and ripening periods. Otherwise controlled atmosphere storage delayed ethylene biosynthesis and also changes in other parameters. This storage technique attracted attention especially for Eşme quince cultivar as transferable method to practice. In this research fructose and malic acid were determined as dominant sugar and organic acid for both fruit species and during all periods.
