Özet

Bu çalışmada; insan tüketimi için kullanılmayan bakliyat sanayisinde göz ardı edilen elek altı soya fasulyesi, kuru fasulye, nohut, yeşil ve kırmızı mercimek gibi 5 farklı baklagil türünün besin madde içeriklerini, protein fraksiyonlarını, in vitro fermentasyon özellikleri ile in vitro rumen gerçek sindirilebilirlik oranlarını belirlemek amacıyla yapılmıştır. Denemede beş baklagil türünden altı farklı (5x6) örnekler Türkiye'nin farklı yerlerinden yaklaşık ikişer kg kadar temin edilerek toplamda 30 adet örnek kullanılmıştır. İn vitro rumen ortamının oluşturulmasında gerekli olan rumen sıvısı yaklaşık 650 kg canlı ağırlığında rumen kanüllü iki adet Holstein inekten temin edildi. Çalışmada kullanılan yem maddelerinin yapılan kimyasal analizleri sonrası belirlenen besin madde içerikleri ile NRC'deki eşitlikler kullanılarak elde edilen sonuçlarına göre TSBM sonuçlarında en yüksek değer sırasıyla soya fasulyesi ve nohutta (%77,36 ve %75,01) gözlenirken en düşük değer ise sırasıyla kuru fasulye ve kırmızı mercimekte (%53,91 ve %64,65) bulunmuştur (P<0,05). Daisy inkübasyonu sonrası hesap edilen İVKMS de ise en yüksek değer yine nohutta (%71,27) olduğu gözlenmektedir. En düşük değerler arasında ise sırasıyla yeşil mercimek (%58,31) ve kırmızı mercimekte (%53,85) bulunmuştur (P<0.05). SE1x sonuçlarında soya fasulyesi (3,76 Mcal/kg) en yüksek değere sahipken en küçük değer sırasıyla kırmızı mercimek ve kuru fasulyede (2,57 Mcal/kg ve 2,53 Mcal/kg) gözlenmiştir (P<0,05). İn vitro fermantasyon sonuçlarına bakıldığında 48 saatlik inkübasyon sonrası en fazla TGÜ (65,16 ml) soya fasulyesi grubunda olurken en az gaz ise sırasıyla (54,05 ve 54,14 ml) yeşil mercimek ve kuru fasulyede gerçekleşmiştir (P<0,05). En yüksek SFO (saat-1) nohutta gözlenirken en düşük ise soya fasulyesinde olduğu belirlenmiştir. LAG (saat) en hızlı kırmızı mercimekte gözlenmiş bunu sırayla soya fasulyesi, yeşil mercimek, nohut ve kuru fasulye şeklinde takip etmiştir. En yüksek fermentasyon hızı oranına ulaşılan zaman ise soya fasulyesi (22,38 saat) ve kuru fasulyede (22,13 saat) hesap edilmiştir. Elek altı yan ürünlerin gaz kromatografide belirlenen uçucu yağ asitlerinden asetik asit, propiyonik asit ve toplam uçucu yağ asitleri sonuçları arasında istatistiksel bir farklılık gözlenmemiştir. Sonuç olarak, denemede kullanılan soya fasulyesi, kuru fasulye, nohut, yeşil ve kırmızı mercimeğin gerek TSBM, IVKMS değerleri ve gerekse HP içeriklerinin yüksek yem değerliliğine sahip olduğu, aynı zamanda by-pass protein içerikleri yeterli bulunmuştur. Bu durum yemlerin ruminant beslemede özellikle protein kaynağı bazı yemler yerine ikame edilebileceği kanaatini ortaya çıkarmıştır. Ham maddenin ve elemenin durumuna göre bu gibi yan ürünlerin yem değerlilikleri değişkenlik gösterebileceği ve yabancı cisim durumu göre de rasyonlarda kullanım oranının değişebileceği kanaatine varıldı.

The aim of this study was to determine the nutrient contents, protein fractions, in vitro fermentation characteristics and in vitro rumen true digestibility rates of five different legume species such as soybean, dry bean, chickpea, green lentil and red lentil, which are not used for human consumption and are ignored in the pulse industry. In the experiment, six different samples of five legume species (5x6) were taken from different parts of Turkey, each weighing about two kilograms, and a total of 30 samples were used. The rumen fluid required to create the in vitro rumen environment was obtained from two Holstein cows with rumen cannulae and a live weight of approximately 650 kg. As demonstrated by the findings obtained through the utilisation of the equations provided by the NRC, in conjunction with the nutrient composition data of the feedstuffs employed in the study following chemical analyses, the maximum TDN value was observed in soybean and chickpea (77.36% and 75.01%), while the minimum value was detected in dry bean and red lentil (53.91% and 64.65%), respectively (P <0.05). It has been observed that the highest value in the IVDMD calculated after Daisy incubation was once again in chickpea (71.27%). The lowest values were found in green lentil (58.31%) and red lentil (53.85%), respectively (P<0.05). In the SE1x results, the highest value was observed in the soybean (3,76 Mcal/kg), while the lowest value was observed in the red lentil and dry bean (2.57 Mcal/kg and 2,53 Mcal/kg), respectively (P<0,05). The in vitro fermentation results revealed that the highest TGP (65,16 ml) was observed in the soya bean group after 48 hours of incubation, while the lowest gas was observed in the green lentil and dry bean groups (54.05 and 54.14 ml), respectively (P<0,05). The highest SFO (h-1) was observed in the chickpea group, while the lowest was observed in the soya bean group. The fastest LAG (h-1) was observed in red lentil, followed by soya bean, green lentil, chickpea and dry bean. The highest fermentation rates were observed in soya beans (22,38 hours) and dry beans (22,13 hours). No statistically significant difference was observed between the results of acetic acid, propionic acid and total volatile fatty acids determined by gas chromatography. The results demonstrated that the TDN, IVDMD values and CP contents of the soya beans, dry beans, chickpeas, green and red lentils utilised in the experiment exhibited high feed value and by-pass protein contents that were deemed to be adequate. This finding substantiates the assertion that these feeds can be employed as a substitute for certain protein source feeds in ruminant feeding. It was concluded that the feed value of such by-products may vary according to the condition of the raw material and the rate of use in rations may vary according to the presence of foreign bodies.
