Özet
Amaç: Bu çalışmada, 2022 yılında Erzurum ili Uzundere ilçesinde dut maliyetini ve karlılık analizini incelemek ve pazarlama yapısını ortaya koymak amaçlanmıştır. Yöntem: Uzundere İlçe Tarım ve Orman Müdürlüğünden alınan dut işletme sayıları dikkate alınarak basit tesadüfi örnekleme yöntemine göre 100 işletme örnek sayısını oluşturmuştur. İşletmelerde anketlerden elde edilen veriler birincil verileri oluşturmuştur. Çalışmada dut için tek ürün bütçe analiz yöntemi kullanılmış olup tesis ve üretim masrafları dikkate alınarak maliyet hesabı ve karlılık analizleri yapılmıştır. Bulgular: İşletmelerde dut üretiminde çalışan işletmecilerin yaş ortalaması 53'tür. İşletmelerde ortalama aile işgücü 2,59 EİB (Erkek İş Birimi), ortalama yabancı işgücü 0,24 EİB olup toplamda 2,83 EİB mevcuttur. İşletmelerde 50 yaş ve üzeri nüfus toplam nüfusun %59,32'sini oluşturduğu için bu çalışmada EİB düşük çıkmıştır. İşletmelerde ortaöğretim mezunu toplamın %31,57'sini, üniversite mezun ise %28,60'ını oluşturmuştur. İşletmelerin %90,00'ında sosyal güvence var olup %79,00'ında tarım dışı gelir mevcuttur. İşletmelerin ortalama aylık gelirleri 27 184,95 ₺ olarak hesaplanmıştır. İşletmelerin sahip olduğu ortalama arazi miktarı 16,47 da. iken ortalama dut alanı 3,42 da. olarak bulunmuştur. Yaş dut tesis masrafları toplamı 11 585,57 ₺/da olup bahçe amortismanı 193,10 ₺/da olarak hesaplanmıştır. Dut üretiminde değişken masraflar toplamı 1 765,43 ₺/da, sabit masraflar toplamı 2 470,16 ₺/da olup üretim masrafları toplamı 4 235,59 ₺/da olarak bulunmuş, 1 kg yaş dutun maliyeti 5,016 ₺ olarak hesaplanmıştır. Sonuç: Yaş dut üretimde dekara brüt kar 7 413,20 ₺, net kar ise 4 943,03 ₺ bulunmuştur. Yaş dutun pazarlama marjı 3,13 ₺/kg, kurutulmuş dutun pazarlama marjı 9,00 ₺/kg ve pekmezin pazarlama marjı 16,43 ₺/kg olarak hesaplanmıştır. Dut, yaş olarak pazarlandığında tüketicinin ödediği fiyatın %77,64'ünün, kuru dut olarak pazarlandığında %82,00'inin, pekmez haline getirilerek pazarlandığında ise %89,05'inin çiftçi eline geçtiği hesaplanmıştır. İşletmeler 1 kg yaş duttan 5,85 ₺, kuru duttan 30,968 ₺, pekmezden 96,81 ₺ kar elde etmektedirler. Sonuç olarak yaş dutun işlenerek satışından çiftçi daha fazla gelir elde ettiğinden dolayı yaş dutu işleyerek satmaları önerilmektedir.

Purpose: In this study, it was aimed to examine the cost and profitability analysis of mulberries and reveal the marketing structure in Uzundere district of Erzurum province in 2022. Method: Taking into account the number of mulberry enterprises received from the Uzundere District Directorate of Agriculture and Forestry, the sample number of 100 enterprises was created according to the simple random sampling method. Data obtained from surveys in businesses constituted primary data. In the study, single product budget analysis method was used for mulberry and cost calculation and profitability analyzes were made by taking into account facility and production costs. Findings: The average age of operators working in mulberry production in enterprises is 53. The average family workforce in businesses is 2.59 EIB (Male Work Unit), the average foreign workforce is 0,24 EIB and there are 2,83 EIB in total. Since the population aged 50 and over constitutes 59,32% of the total population in enterprises, EİB was low in this study. In businesses, secondary school graduates constituted 31,57% of the total, and university graduates constituted 28,60%. 90,00% of the enterprises have social security and 79,00% have non-agricultural income. The average monthly income of businesses was calculated as 27 184,95 ₺. The average amount of land owned by businesses is 16,47 da. While the average mulberry area is 3,42 da. was found as. The total of fresh mulberry facility costs is 11 585,57 ₺/da and garden depreciation is calculated as 193,10 ₺/da. In mulberry production, the total variable costs were 1 765,43 ₺/da, the total fixed costs were 2 470,16 ₺/da, the total production costs were found to be 4 235,59 ₺/da, and the cost of 1 kg of fresh mulberry was calculated as 5,016 ₺/da. Result: Gross profit per decare in fresh mulberry production was found to be 7 413,20 ₺ and net profit was 4 943,03 ₺. The marketing margin of fresh mulberry is calculated as 3,13 ₺/kg, the marketing margin of dried mulberry is 9.00 ₺/kg and the marketing margin of molasses is 16,43 ₺/kg. It has been calculated that 77,64% of the price paid by the consumer when the mulberry is marketed as fresh, 82,00% when it is marketed as dried mulberry, and 89,05% when it is marketed as molasses, reaches the farmers. Businesses earn 5,85 ₺ from 1 kg of fresh mulberries, 30,968 ₺ from dried mulberries, and 96,81 ₺ from molasses. As a result, since farmers earn more income from selling fresh mulberries by drying them or turning them into molasses, it has been suggested that they process and sell fresh mulberries.
