The Effect of Nutrition Education on Food Refusal and Nutritional Behaviors in Children: A Randomized Controlled Trial," Doctoral Dissertation, Department of Nursing, Institute of Health Sciences, Trakya University, Edirne, 2026. Introduction and Aim: Nutrition is one of the most important interactions between children and parents. Childhood is a critical period for establishing healthy eating habits, as dietary behaviors begin to develop during this stage of life. In promoting healthy eating behaviors, educational approaches that actively engage children are needed to increase knowledge levels, support the development of healthy nutritional behaviors, and facilitate the adoption of these behaviors as lifelong habits, rather than relying solely on traditional teaching methods. This study was conducted to determine the effects of nutrition education delivered through videoassisted and game-based educational methods on children's food refusal and healthy eating behaviors. Materials and Methods: This study was designed as a randomized experimental intervention study with a pre-test/post-test design. The research was conducted between April 6, 2025, and June 15, 2025, with 84 preschool children, their parents, and teachers attending a kindergarten located in the central district of Edirne Province (n = 84). The study consisted of three groups: the video group (n = 32), the game group (n = 27), and the video + game group (n = 25).Children in the video group watched an animated educational video entitled Little Explorers Learn About Foods, which was developed by the researcher. Children in the game group received training through the I Am Learning About Foods game, also developed by the researcher. Children in the video + game group participated in both the I Am Learning About Foods game and the Little Explorers Learn About Foods animated video intervention. Data were collected using the 'Personal Information Form,' the 'Nutritional Behavior Scale,' the 'Child Food Rejection Scale,' and the 'Child Food Rejection Scale for Preschool Teachers. Results: When all groups were compared, the post-test mean scores of the Nutritional Behavior Scale in the video and game groups were found to be significantly higher than their pre-test mean scores (p = 0.03). In the game group, the post-test mean scores of the selectivity subdimension of the Food Rejection Scale were significantly lower than the pre-test mean scores (p < 0.05). In the within-group comparisons across all groups, the post-test mean scores of the neophobia subdimension in the video + game group were found to be significantly lower than the pre-test mean scores (p < 0.05). In both the video and game groups, the pre-test mean scores of the selectivity subdimension of the Child Food Rejection Scale for Preschool Teachers were significantly higher than the post-test mean scores (p < 0.05). Similarly, in the video and game groups, the post-test mean neophobia scores were significantly lower than the pre-test scores (p < 0.05). Furthermore, the post-test mean scores of the Child Food Rejection Scale for Preschool Teachers in all groups were found to be significantly lower than the pre-test mean scores (p < 0.05). Conclusion: The findings of the study demonstrated that video, game, and combined video + game-based interventions reduced food rejection behaviors and improved healthy eating behaviors among preschool children.
