Özet

Gıda katkı maddeleri, ticari gıdalara olumlu özellikler katmak amacıyla kullanılmaktadır. Ancak toplumun bu konudaki bilgisi ve katkı maddelerini tüketim oranları tam bilinmemektedir. Bu çalışmada, bireylerin gıda katkı maddelerine maruziyetlerinin potansiyel riskini ve katkı maddeleri hakkındaki bilgilerini saptamak amaçlandı.Bu kesitsel çalışma Şubat 2010-Nisan 2011'de İstanbul'un Beşiktaş ilçesinde yürütüldü. Yüz yüze görüşmeyle uygulanan anketlerde bireylerin eğitim düzeyi, bazı antropometrik özellikler, öğün düzenleri, kronik hastalıklar, katkı maddeleri hakkındaki bilgi durumları sorgulandı. Sağlığa olası olumsuz etkileri nedeniyle üstünde sıkça tartışılan; nitrit, nitrat, monosodyumglutamat (MSG) ve yüksek fruktozlu mısır şurubu (YFMŞ) içeren seçili bazı gıdaların tüketim sıklıkları sorgulandı. Food additives are used for including positive qualities to commercial foods. But the knowledge and the consumption rates of public about them is not known clearly. In this study it is aimed to determine the knowledge of public and the potential exposure risks to food additives.This study executed in Istanbul?s Besiktas district in Feb.2010-Apr.2011. The educational status, some anthopometric measurements, meal regulations, chronic diseases and knowledge status about food additives were asked with the questionnaires perfomed by face to face. Also the consumption of some selected foods including the additives: nitrite, nitrate, monosodiumglutamate (MSG) and high fructose corn syrup (HFCS), which are disscussed because of their possible adverse effects on health, were asked. Datas were estimated by using frequency, %ratio, means, standard deviation, Fisher?s crosstabs and chi-square analysis of SPSS15,0.The average age, weight, height and BMI of 384 participants (253 women, 133 men) were respectively; 42,31 ±15,01yrs, 72kg, 167cm, 26kg/m². Individuals were not informed enough about food additives.Nitrite and nitrate are provided respectively by sausage and frized meat products mostly. HFCS is provided by concentrated fruit juice and chocolate. Besides among the foods containing MSG; chips, frizzed patato and salad souces consume more. When the risk analysis proceed, the nitrite levels provided by sausage exceeds suggested ADI levels. Also it is predicted that consuming several foods include HFCS and MSG during the day it would be exceess the ADI levels. Reducing the adverse effects of food additives are under consumer and manufanturer responsibility.
