Özet
Ill ÖZET Toplum beslenmesinde önemli bir. yeri olan sütün, insan ge reksinmesine ve tadım zevkine gore, çeşitli şekillerde de ğerlendirildiği bilinmektedir. Kullanım, istem ve zorunluluk lardan doğan üretimdeki bu çeşitlenmeler, yeni teknolojile rin ortaya çıkmasına neden olmuştur. Bu gelişmelerde sosyo ekonomik etkenler ile ilerleyen bilim ve tekniğin etkisi bü yük olmuştur. En sonunda, insanlık sütü bir medeniyet Ölçü^ sü olarak simgeleştirmeye kadar götürmüştür. Böylece beslen menin temel kaynağı olan süt, gelişmiş ülkelerde başlı ba şına bir endüstri dalı haline gelmiştir. Ayrıca gelişen bu endüstride yer alan teknolojiler o ülkenin ekonomik hayatın da da önemli rol oynamaktadır. Gıda endüstrisinde büyük gelişmeler gösteren ülkemizde de, süt endüstrisine yönelik bazı ilerlemeler gözlenmektedir. Nüfusumuzun büyük çoğunluğunun tarımla uğraşması ve sütün bir tarımsal hammadde olması, süt sektörünün ülkemizdeki önemini daha da artırmaktadır. Toplumu bu kadar yakından il gilendiren süt endüstrisinin, AET ye girme hazırlıkları için de olan Türkiyemiz' deki teknolojik düzeyinin bilinmesi ve eksiklerinin ivedi giderilmesi zorunludur. Yapılan bu çalışmada, süt endüstrisinin teknolojik düzeyi, anketle tarafımıza ulaştırılan veriler çerçevesinde irde- lenmeye çalışılmıştır. Değerlendirmeler sonucu, Türkiye- deki süt endüsrisinin teknolojik düzeyinin çağdaş teknolo jilere kıyasla yetersiz kaldığı ve çoğu sorunlarının yıllar boyu yakınılan ve bilinen sorunlardan farklılık göstermediği görüşünü getirmiştir.

IV ABSTRACT It is a known fact that milk, which has an important nutri tive value, is used in a variety of ways, depending on need and on the sense of taste. The large variety of milk products, resulting from demand and necessity have caused new technolo gies to develop. The influence of socioeconomic factors and that of advancement in science and technology on the existing developments is quite significant. The importance of milk has reached such an important point that it has even bean used as a symbol for the degree of civilization in a given country. In developed countries milk and milk products have become a major industry in its own right. Besides, the technologies used in this industry play a significant role in the ecomomic life of these countries. In our country, which has considerably developed in food industry, has also experienced some progress in milk industry. The fact that the majority of our population is engaged in agriculture, and that milk is an agricultural raw-material produce underline the importance of the milk sector in our country. Therefore it is necessary that the technologies used in this sector should be modernized. It is especially important to improve the technological level of the milk industry now, since at present Turkey is at the process of trying to become a full member of EEC. This study is an attempt to analyse the technological level of the milk industry and the analysis is supported by the data received from questionnaires used. The result of theevaluations has shown the technological level of the milk industry in Turkey is insufficient when compared to the modern technologies used in other countries and that most of the existing problems are similar to those that have been known and not corrected over the years.
