Özet
Bu tez çalışmasında, yerel halkın gastronomi imajı ve yiyecekte yenilik korkusu durumlarının etnik yiyecek ve destinasyonda yerel yiyecek tüketim niyeti üzerinde bir etkisinin olup olmadığını incelemek için oluşturulan modelin test edilmesi amaçlanmıştır. Çalışmanın amacı doğrultusunda literatür taraması yapılmış ve çalışmada ele alınan değişkeler detaylı olarak irdelenmiştir. Oluşturulan modelin test edilmesi için nicel araştırma deseni tercih edilmiştir ve anket yöntemi ile veriler elde edilmiştir. Anket çalışması Antalya'da ikamet eden 384 katılımcı ile 1 Ocak 2020 ile 1 Mart 2020 tarihleri arasında gerçekleştirilmiştir. Araştırma kapsamında elde edilen verilerin analizi sonucunda yerel halkın gastronomi imajının olumlu olduğu, yiyecekte yenilik korkusu algılarının nötr olduğu belirlenmiştir. Gastronomi imajının ve yiyecekte yenilik korkusunun etnik yiyecek ve destinasyonda yerel yiyecek tüketim niyeti üzerinde anlamlı bir etkisinin olduğu belirlenmiştir. Yiyecekte yenilik korkusunun etnik yiyecek ve destinasyonda yerel yiyecek tüketim niyeti üzerindeki etkisi karşılaştırıldığında etnik yiyecek tüketim niyetine etkisi yerel yiyecek tüketim niyetine göre daha fazladır.

In this thesis, it is aimed to be tested with a quantitative research design of the model established to examine whether local consumers' perception of national cuisine and food neophobia have an effect on the intent of local destination and ethnic food consumption. According to purpose of the study, a literature review was made and the variables selected in the study were examined in detail. The data were obtained through the survey method, and the survey was conducted between 1 January 2020 and 1 March 2020 with 384 participants residing in Antalya province. As a result of the analysis of the data obtained within the scope of the research, the gastronomy image of the local consumers is positive, but the food neophobia is neutral. It has also been identified that the food neophobia and the image of gastronomy has a significant effect on the intent of local destination and ethnic food consumption. It was determined that the effect of food neophobia on ethnic food consumption intention was higher than that of local food consumption intention in the destination.
