Onion is consumed frequently both for taste and nutritional attributes, and a rich source of several phytochemicals, including flavonoids and anthocyanins. In 2014, 3 million tonnes of onions were produced in the U.S. Even though onion skin is rich in flavonoids as well as fiber, its use is limited. The aim of this study is to characterize the polyphenol profile of red and yellow onion skin and flesh, evaluate red onion skin effects on lipid oxidation and microbial growth, and investigate the possible synergetic effect of modified atmosphere packaging and red onion skin extract. The antioxidant capacity levels of extracted samples in different water temperatures and solvent types were measured by ORAC, DPPH, and total phenolic content assays. Anthocyanin levels and polyphenol characterization were conducted using HPLC. The effects of red onion skin on lipid oxidation were analyzed on a washed tilapia meat system (WTMS). Antimicrobial effects were observed by minimum inhibitory concentration (MIC) assay using bacteria strains, Salmonella enteretidis, Listeria monocytogenesis, Staphylococcus aureus, Escherichia coli O157:H7, Bacillus cereus, and Shigella dysenteriae.
