Özet
Bu araştırmanın temel amacı mesleki ve teknik eğitim liselerinde, mesleki eğitim kapsamında verilen meslek derslerinde uygulanan modüler öğretim programının“Yiyecek İçecek Hizmetleri”modülleri çerçevesinde öğrencilerin görüşlerine göre değerlendirmektir. Çalışma“Yiyecek İçecek Hizmetleri”modüler öğretim programı uygulanan kurumlarda eğitim programını değerlendirmeye yönelik betimsel analiz ile hazırlanmış bir araştırmadır. Araştırmanın verileri Yiyecek İçecek Hizmetleri programı kapsamında eğitim veren mesleki ve teknik eğitim lisesinde“Yiyecek İçecek Hizmetleri”modülleri ile eğitim gören 30 öğrenci ile yapılan görüşmeler ile elde edilmiştir. Verilerin toplanmasında yarı yapılandırılmış görüşme formu kullanılmıştır. Görüşmelerde“Yiyecek İçecek Hizmetleri”modüler öğretim programı kapsamında amaç, içerik, öğrenme ve öğretme süreci değerlendirmelerine yönelik alınan öğrenci görüşleri doğrultusunda yorumlar yapılmıştır. Görüşler sonucunda elde edilen bulgularda şu sonuca ulaşılmıştır: Uygulanan modüler programın amaçları mesleği öğretmeye yönelik anlaşılır, açık bir dil ile hazırlanmıştır. Ancak program kapsamında hatalı olan ve içeriğinin güncel koşulları yansıtacak şekilde güncellenmesi gerekmektedir. Programın öğrenme ve öğretme sürecinde atölyelerdeki araç ve gereçlerin yetersizliği nedeni ile istenilen düzeyde eğitim gerçekleştirilememektedir. Bireysel olarak öğrenmelerde modül tekrarının süre sıkıntısı nedeni ile yapılanmaması eğitimin istenilen düzeyde gerçekleşmediği tespit edilmiştir. Uygulanan mutfak bilgilerinin değişen yemek yeme alışkanlıkları ile doğru orantılı olarak uzmanlar tarafından tüm gelişmeler dikkate alınarak revize edilmesi uygun olacağı düşünülmektedir.

The main purpose of this research is to evaluate the opinions of the students within the framework of the“Food and Beverage Services”modules of the modular curriculum applied in the vocational courses given within the scope of vocational education in vocational and technical education high schools. The study is a research prepared with descriptive analysis for the evaluation of the education program in the institutions where the“Food and Beverage Services”modular curriculum is implemented. The data of the research were obtained through interviews with 30 students studying with the“Food and Beverage Services”modules in Vocational and Technical Education High School providing education within the scope of the Food and Beverage Services program. A semi-structured interview form was used to collect data. In the interviews, comments were made in line with the opinions of the students regarding the purpose, content, learning and teaching process evaluations within the scope of the“Food and Beverage Services”modular curriculum. The following conclusions were reached in the findings obtained as a result of the opinions: The aims of the applied modular program were prepared in an understandable and clear language for teaching the profession. However, it is incorrect within the scope of the program and its content must be updated to reflect current conditions. In the learning and teaching process of the program, the desired level of education cannot be realized due to the inadequacy of the tools and equipment in the workshops. It has been determined that the module repetition in individual learning was not structured due to time constraints, and the education did not take place at the desired level. It is thought that it would be appropriate to revise the applied culinary knowledge by the experts in direct proportion to the changing eating habits, taking into account all the developments.
