Özet
Amaç: Meyve ve sebze üretimi ülke ekonomimiz için büyük öneme sahip ihracat ürünlerimizidir. Bu ürünlerin hasat sonrasında depolanması büyük önem arz etmektedir. Ürünlerin korunması ve uzun süre muhafaza edilmesi de bizim için önemli olan bir diğer konudur. Meyve ve sebzelerin depolanması esnasında ürünler üzerinde bulunan patojenler ya da hasat veya taşıma esnasında ürünlerin yaralanması sebebiyle bu yaralardan giren patojen mikroorganizmaların neden olduğu hastalık etmenleri depolama aşamasında meyve ve sebzede büyük kayıplara neden olmaktadır. Bu durum hem ülke ekonomisini hem de üreticiyi olumsuz yönde etkilemektedir. Bu hastalık etmenleri ile mücadelede sentetik ilaçlar kullanılmaktadır. Fakat bu durum hem insan sağlığını hem de çevreyi olumsuz yönde etkilemektedir. Kimyasal kullanımı aynı zamanda bu ürünlerin tüketimi esnasında insan vücuduna girerek daha zararlı bir durum ortaya çıkarmaktadır. Bu yüzden bu çalışmada sentetik ilaç kullanımına alternatif olarak doğada bulunan bazı bitkilerden elde edilen uçucu yağların bu patojenlere karşı kullanım olanaklarının araştırılması amaçlanmıştır. Yöntem: Depolardan alınmış hastalıklı meyve ve sebze örneklerinden izole edilen bakteri strainlerine uçucu yağlar in vitro koşullarda test edilmiştir. Bulgular: Yapılan çalışmalar sonucunda elde edile bakteri strainlerine karşı kullanılan Tymus sipyleus , Satureja hortesnsis ve Satureja montana bitkilerinin uçucu yağları daha etkili bir engelleme göstermiştir. Sonuçlar: Elde edilen bulgulara bakılarak sonuç olarak meyve ve sebzelerde depolama aşamasında oluşan hastalıklara karşı uçucu yağların kullanılabileceği düşünülmektedir.

Purpose: Fruit and vegetable production are export products of great importance to our country's economy. The storage of these products after harvest is of great importance. The protection and long-term preservation of these products is another important issue for us. During the storage of fruits and vegetables, pathogens present on the products or pathogens that enter through wounds caused during harvesting or transportation can lead to diseases that result in significant losses in fruits and vegetables during the storage phase. This situation negatively impacts both the national economy and the producer. Synthetic drugs are used to combat these disease agents. However, this situation negatively affects both human health and the environment. The use of chemicals also causes more harmful situations by entering the human body during the consumption of these products. Therefore, this study aims to investigate the possibilities of using essential oils obtained from some plants found in nature as an alternative to synthetic drugs against these pathogens. Method: Essential oils were tested in vitro on bacterial strains isolated from diseased fruit and vegetable samples taken from storage facilities. Findings: As a result of the studies conducted, the essential oils of Tymus sipyleus, Satureja hortesnsis and Satureja montana plants used against the bacterial strains obtained have shown more effective inhibition. Conclusions: Based on the findings, it is thought that essential oils can be used to combat diseases that develop in fruits and vegetables during storage.
