ÖZET Yüksek Lisans Tezi FARKLI SÜRELERDE SÜTTEN KESÎLEN AKKEÇİ ERKEK OĞLAKLARINDA BESİ PERFORMANSI, KESİM VE KARKAS ÖZELLİKLERİ Serhat KARACA Ankara Üniversitesi Fen Bilimleri Enstitüsü Zootekni Anabilim Dalı Danışman : Prof. Dr. Mehmet ERTUĞRUL Çalışma farklı sürelerde sütten kesimin Akkeçi oğlaklarının besi, kesim ve karkas özelliklerine etkilerini araştırmak amacıyla yürütülmüştür. Araştırmanın deneme materyalini, 45, 60 ve 75 günlük yaşlarda sütten kesilen toplam 32 baş Akkeçi erkek oğlağı oluşturmuştur. Besi, gruplar ortalama 27,0 kg ağırlığa ulaştıklarında sona erdirilmiş ve her gruptan 5'er oğlak, kesim ve karkas özelliklerinin belirlenmesi amacıyla kesime alınmıştır. Kırkbeş, 60 ve 75 günde sütten kesilen oğlaklarda sütten kesim ağırlıkları sırasıyla; 1 1,4 ± 1,02, 16,8 ± 0,70 ve 16,9 ± 0,60 kg olmuştur. Besi başı canlı ağırlıkları aynı sırayla; 12,9 ± 0,88, 19,2 ± 0,79 ve 18,5 ± 0,71 kg olarak belirlenmiştir. Besi sonu ağırlıkları ve besi süresi ise aynı sırayla; 28,1 ± 1,43, 27,9 ± 1,00 ve 26,5 ± 1,02 kg ; 70, 42 ve 42 gün olarak gerçekleşmiştir. Besi süresince gruplarda günlük canlı ağırlık artışları ve yem değerlendirme sayılan sırasıyla; 218,2 ± 10,50, 207,1 ± 8,90 ve 189,2 ± 11,63 g; 3,26, 3,60 ve 3,46 olmuştur. Besi, gruplarda yine sırasıyla; 128,6 ± 1,36, 120,3 ± 0,91 ve 125,3 ± 0,49 günlük yaşta sona ermiştir. Kırkbeş, 60 ve 75 günde sütten kesilen gruplarda sırasıyla; sıcak randıman (%), 45,2 ± 0,74, 45,8 ± 0,49 ve 46,1 ± 1,05; iç yağ ağırlığı, 0,41 ± 0,03, 0,32 ± 0,02 ve 0,33 ± 0,02 kg; böbrek ve leğen yağı ağırlığı, 0,38 ± 0,04, 0,30 ± 0,04 ve 0,28 ± 0,03 kg olarak belirlenmiştir. Kırkbeş günlük yaşta sütten kesilen grupta iç yağ ve böbrek-leğen yağı ağırlığı diğer gruplara göre istatistiksel önemli düzeyde daha fazla bulunmuştur (P

ABSTRACT Master Thesis THE FATTENING PERFORMANCE-SLAUGHTER AND CARCASS CHARACTERISTICS OF AKKEÇI MALE KIDS WEANED AFTER DIFFERENT SUCKLİNG PERIODS Serhat KARACA Ankara University Graduate School of Natural and Applied Sciences Department of Animal Science Supervisor : Prof. Dr. Mehmet ERTU?RUL The study was conducted to find out the effect of the different weaning ages on fettening performance, slaughter and carcass characteristics of Akkeçi male kids. The animal material of the study consisted of total 32 heads of kids weaning ages 45, 60 and 75 days. Fattening was finished when the groups' live weight was 27 kg. For the purpose of defining slaughter and carcass traits, five kids were slaughtered from each group. The weaning weight of kids weaned at 45, 60 and 75 days of age were 1 1,4 ± 1,02, 16,8 ± 0,70 ve 16,9 ± 0,60 kg respectively. The starting weight of fattening of kids in 45, 60 and 75 days of weaning ages were found; 12,9 ± 0,88, 19,2 ± 0,79 ve 18,5 ± 0,71 kg respectively. The final weight of kids in 45, 60 and 75 day groups, at the end of the 70, 42 and 42 days of fettening periods were 28,1 ± 1,43, 27,9 ± 1,00 ve 26,5 ± 1,02 kg respectively. During the fattening; daily live weight gain and feed conversion rate of the groups were found 218,2 ± 10,50, 207,1 ± 8,90 and 189,2 ± 1 1,63 g ; 3,26, 3,60 and 3,46 respectively. However the age of kids at the end of the fattening period were ; 128,6 ± 1,36, 120,3 ± 0,91 ve 125,3 ± 0,49 days respectively. Dressing percentage (hot), internal fat and kidney fat of kids were weaned at 45,60 and 75 days of age were 45,2 ± 0,74, 45,8 ± 0,49 ve 46,1 ± 1,05 % ; 0,41 ± 0,03, 0,32 ± 0,02 ve 0,33 ± 0,02 kg ; 0,384 ± 0,04, 0303 ± 0,04 ve 0,284 ± 0,03 kg respectively. The group weaned at 45 days of age were found to have more internal and kidney fat contentThis group when compared with the other groups was taken for fattening at early age and low live weight Probably the protein : energy ratio in feeds above the physiological requirements of the kids and the prolong fattening period may be accounted for this high fatness. Moreso with the exception of internal fat content, the difference between the groups was found to be statistically insignificant The rack joint weight and MLD area of kids were weaned at 45,60 and 75 days of age were 0,473 ± 0,033, 0,433 ± 0,021 ve 0,428 ± 0,037 kg ; 9,580 ± 0,806, 9,720 ± 0,661 ve 8,160 ± 0,820 cm2 respectively. The results of chemical analyses in the rack excluding bone tissue of kids weaned at 45, 60 and 75 days of age were; water 73,1 ± 0,43 %, 73,4 ± 0,46 % and 73,9 ± 0,53 %; protein 19,0 ± 0,26 %, 18,9 ± 0,47 % and 18,5 ± 0,37 %; fat 8,0 ± 0,26 %, 7,7 ± 1,59 % ve 7,7 ± 0,95 %; ash 1,0 ± 0,01 %, 1,0 ± 0,01 % and % 1,0 ± 0,04 %; collagen 6,8 ± 0,57 %, 6,1 ± 0,42 % and % 6,6 ± 0,86 respectively. The difference between the groups was found to be statistically insignificant.
