ÖZET Yüksek Lisans Tezi İZMİT'TE LİSE ÖĞRENCİLERİNİN BESİN TERCİHLERİ VE BESLENME BİLGİ DÜZEYLERİ ÜZERİNDE BİR ARAŞTIRMA Ümit SORMAZ Ankara Üniversitesi Fen Bilimleri Enstitüsü Ev Ekonomisi (Beslenme Bilimleri) Anabilim Dalı Danışman: Prof. Dr. Metin Saip SÜRÜCÜOĞLU Bu araştırma; Kocaeli ili İzmit ilçesinde Milli Eğitim Bakanlığı' na (MEB) bağlı lise ve dengi okullarda öğrenim gören 1 80 kız, 1 80 erkek toplam 360 öğrencinin besin tercihleri ve beslenme bilgi düzeylerini belirlemek amacıyla planlanıp yürütülmüştür. Öğrencilerin % 89.4' ünde herhangi bir besine karşı alerji görülmediği, % 88.3' ünün herhangi bir diyet uygulamadığı, % 92.2“ sinin beslenme dersi almadığı. % 55.5' inin basında beslenmeyle ilgili çıkan haberlerden etkilenmediği. % 55.8”inin satın aldıkları ambalajlı ürünlerde ürünün üretim -son kullanma tarihine dikkat ettikleri, % 42.5' inin bazen yeterli ve dengeli beslendiklerini düşündükleri belirlenmiştir. Öğrencilerin % 51.9' unun günde üç öğün tükettikleri, % 20.3' ünün kahvaltıyı, % 18.6' sının öğle yemeğini, % 7.5' inin akşam öğününü atladığı tespit edilmiştir. Öğrencilerin % 55.0' inin okul saatinde dışardan yemek yedikleri yerlerden memnun oldukları, fast food restoranlara % 81.9' unun arkadaşlarıyla. % 49.2' sinin hafta sonu gitmeyi tercih ettikleri tespit edilmiştir. Öğrencilerin fast food restoranları yiyecekler lezzetli olduğu için, fast food servisi yapan restoranlardan hamburger restoranını, fast food ürünlerden en çok hamburgeri. içeceklerden en çok kolalı içecekleri, geleneksel mutfağımızdaki yiyeceklerden en çok mantıyı, tatlılardan en çok baklavayı, ayak üstü satılan yiyeceklerden en çok köfte ekmeği ve simit-poğaçayı, etlerden en çok kırmızı eti, kurubaklagil yemeklerinden en çok etli kurufasülye ve etli nohutu, pilav/makarna çeşitlerinden en çok pirinç pilavını, sebze yemeklerinden en çok ıspanak yemeğini, meyvelerden en çok mandalina ve muzu, peynir çeşitlerinden en çok beyaz peyniri, tatlılardan en çok balı ve reçeli tercih ettikleri tespit edilmiştir. 2006, 148 sayfa

ABSTRACT Master Thesis A RESEARCH ON THE FOOD PREFERENCES AND NUTRITIONAL KNOWLEDGE OF THE HIGH SCHOOL STUDENTS IN IZMIT DISTRICT Ümit SORMAZ Ankara University Graduate School of Natural and Applied Sciences Department of Home Economics (Nutrition Sciences) Supervisor: Prof. Dr. Metin Saip SÜRÜCÜO?LU This research has been planned and conducted to clarify the food preferences and nutritional knowledge of the 360 high school students, 180 girls and 180 boys, in izmit. Kocaeli. Depends on this research, it has been concluded that 89.4 % of the students have no any allergic reaction to any food; 88.3 % of them aren't on diet; 92.2 % of them haven't studied any lesson on how to nourish; 55.5 % of the pupils aren't affected to any news about nourishment on TV; 55.8 % of them pay attention to the production and expiration date of the packed products they buy and 42.5 % of them think that they sometimes nourish enough and balanced. Then, it has been determined that 5 1.9% of the students eat three meals a day, but on the other hand 20.3% of them omit breakfast, 18.6% of the pupils omit lunch and 7.5% of them omit dinner. Also, it has been concluded that 55% of the students are satisfied with the restaurants where they have their meals during the school time. Moreover, 81.9% of them prefer to go to fast food restaurants with their friends and 49.2% of them prefer to go there at the weekends. Following these results, it has been determined that students prefer to go to fast food restaurants because of having delicious food; next, they prefer to go to the restaurants who sell hamburger among the other fast food restaurants; they also prefer to eat hamburger among the fast food; to drink coke among the drinks. Besides, they mostly prefer to eat“manti”(a ravioli-like dish served with yoghurt) among our traditional food; to eat“baklava”(sweet pastry generally cut into diamond shaped pieces) among the deserts; to eat meatball with bread,“simif”(savours' roll covered with sesame seeds) and“poğaça”(savoury pastry) among our traditional fast food; dried beans with meat and chickpea with meat among legumes meals; pilaf among rice/pasta kinds; spinach among vegetable meals; mandarin and banana among fruits; white cheese among cheese kinds and lastly honey and jam among sweets. 2006,148 pages Kev Words: Student.
