Özet
Isparta ilinde yaşayan hanehalklarının ev dışı gıda tüketimi incelenen bu çalışmada, hanehalklarının ev dışı gıda tüketimi tercihini etkileyen başlıca sosyoekonomik faktörlerin analizi amaçlanmıştır. Bu amaçla, Logit Modeli kullanılmış ve hanehalklarıyla yüz yüze görüşme yoluyla yapılan anketlerden elde edilen veriler analiz edilerek model tahmin edilmiştir. Araştırma sonuçlarına göre incelenen hanehalklarının ortalama aylık geliri 5.642,35 TL, aylık ortalama tüketim harcaması 5.169,22 TL, aylık ortalama gıda harcaması 1.396,58 TL ve aylık ortalama ev dışı gıda harcaması ise 393,71 TL olarak belirlenmiştir. İncelenen hanehalklarının %45,45'inin ev dışı gıda tüketiminde bulundukları tespit edilmiştir. Analiz sonuçlarına göre, modele dahil edilen açıklayıcı değişkenlerden bir tanesi çalışan eş unsuru hariç hepsinin beklenen işarete sahip olduğu tespit edilmiştir. Öte yandan hane büyüklüğü ve eğitim durumu beklenen işarete sahip olsa da istatistiksel olarak anlamlı değildir. Yine, hanenin gelir seviyesi ve hanehalkı reisinin eğitim durumu ön lisans ve üzeri olması ve hijyeniklik faktörlerinin ev dışı gıda tüketimi olasılığını pozitif etkilediği, hane büyüklüğünün üç ve üzeri olması, hanehalkı reisinin evli olması, evdeki gıda tüketimi harcaması, ekonomiklik ve sağlık faktörlerinin ev dışı gıda tüketimi olasılığını negatif etkilediği belirlenmiştir. Model tahmin sonuçlarına göre değişkenlerin ev dışı gıda tüketimi olasılığına etkileri teorik beklentiyle uyumlu olarak sırasıyla hane büyüklüğü (-%3), medeni durum (-%36), eğitim durumu (%1), ikinci gelir grubu (%32), üçüncü gelir grubu (%49), sağlık (-%58), ekonomiklik (-%50), hijyeniklik (%16) ve evdeki gıda tüketimi harcamaları (- %0,02) olarak hesaplanmıştır

In the study investigating the household food consumption away from home in Isparta, it is aimed to determine the main socio-economic factors affecting household preferences. For this purpose, data is obtained through face-to-face surveys with households and the Logit Model is utilised for the estimation. According to the results of the research, the average monthly income of the households is determined to 5,642.35 TL, the average monthly consumption spending is 5,169.22 TL, the average monthly food spending is 1,396.58 and the average monthly food spending away from home is 393.71 TL. It is also found that %45.45 of the households consume food away from home. The model estimation reveals that all but one of the explanatory variables employment status of spouse included in the model have expected signs. On the other hand, although household size and education level have the expected sign, they are statistically not significant. Again, it is determined that the income level of the household and associate degree and above the education level of the head of the household and hygiene factors affect the possibility of food consumption away from home positively, the household size that is three or higher, married head of household, household food consumption expenditure at home, economy and health factors affect the possibility of food consumption away from home negatively. According to the Model estimation results, the effects of variables are parallel with theoretical expectations and the effects of household size and marital status on the probability of food away from home consumption are -%3 and -%36. The same figures are %1, %32, %49, -%58, -%50, %16 and -%0.02 for educational level, second income group, third income group, health, economy, hygiene and household food consumption expenditures, respectively.
