Özet

Interfacial science is important in the development of new food products and improvement of processes including frying, baking, and emulsification. High temperatures are often used to obtain desirable changes in foods yet limited amounts of research on interfacial science have been conducted at high temperatures. The purpose of this research was to understand the effect of high temperature (from C up to 2 C) on contact angles of unused olive oil and Canola oil. To quantify the effect of temperature on contact angle of olive oil and Canola oil, measurements were conducted using the sessile drop method (Ramé-Hart Instruments) for an oil-air interface - C) and an oil-steam - C) interface on a PTFE surface. It was found that there was a linear relationship between contact angle and temperature (R2 >0.98). Contact angles of oils decreased linearly as temperature increased. No significant difference was found between oil-steam and oil-air interfaces on contact angles of oils (p=0.3054) at elevated temperatures. Further research is needed to determine the relationship between the contact angle and interfacial tension and their effect on oil uptake in fried foods.
