Özet
Dünyada“sürdürülebilirlik”kavramı 1980'li yıllarda gündeme gelmiştir ve güncelliğini halen korumaktadır. İtalya'da 1986 yılında başlayan Yavaş Gıda (SlowFood) Hareketi'nin hedef ve ilkeleri de“sürdürülebilirlik”yaklaşımı ile uyumludur. Büyük ilgi uyandıran bu hareket 1989 yılında Paris'te yayınlanan manifesto ile uluslararası boyuta ulaşmıştır. Bu hareket gerçekte yaşamın her yönü ile ilgilidir. Ancak,“ iyi, temiz ve adil”ilkeleri ile daha çok gıda sistemine ve yemek kültürüne odaklanmıştır. Dolayısı ile tarım ve gastronomi Yavaş Gıda Hareketi'nin etkilediği başlıca sektörlerdir. Yavaş Gıda Hareketi'nin gastronomi sektörü üzerine etkileri daha çok Yavaş Şehir ve Nuh'un Ambarı üzerinden olmuştur. Dünyada, 2022 yılında 33 ülkeden 288 yavaş şehir bulunmaktadır. Nuh'un Ambarı kataloğunda ise 150 ülkeden 56555 gastronomik ürün yer almaktadır. Türkiye'den ise Yavaş Şehir listesinde 22 şehir ve Nuh'un Ambarı'nda 78 ürün ve gıda bulunmaktadır. Yavaş Şehir yaklaşımı şehirlerdeki geleneksel yemeklerin, yerel ürünlerin ve konukseverliğin yaşamasına katkıda bulunmuştur. Nuh'un Ambarı ise yok olmakta olan geleneksel ürün ve gıdaların geleceğe taşınmasını sağlamaktadır.

Theconcept of“sustainability”in the world came to the fore in the 1980s and is stil up to date. The goals and principles of the Slow Food Movement, which started in Italy in 1986, are also compatible with the“sustainability”approach. This movement, which aroused great interest, reached an international dimension with the manifesto published in Paris in 1989. This movement is actually related to life in every aspect. However, it focused more on the food system and culinary culture with the principles of“good, clean and fair”. Therefore, agriculture and gastronomy are the main sectors affected by the Slow Food Movement. The effects of the Slow Food Movement on the gastronomy sector were mostly through the Slow City and the Ark of Taste. In the world, there are 288 slow cities from 33 countries in 2022. The Ark of Taste catalog includes 56555 gastronomic products from 150 countries. From Turkey, there are 22 cities in the Slow City list and 78 products and foods in the Ark of Taste. The Slow City approach has contributed to the survival of traditional dishes, local products and hospitality in the cities. The Ark of Taste, on the other hand, ensures that traditional products and foods that are disappearing are carried to the future.
