Özet

Yumurta, esansiyel aminoasitler ve yağ asitleri açısından dengeli bir kaynak olup, anne sütüne yakın biyolojik değere sahip olan yumurta“örnek protein”olarak gösterilmektedir. Alerjik sorunu olmayan bireyler için yumurta, tam bir gıdadır. Bu tez araştırması, İstanbul ili Silivri ilçesinde yumurta tüketim ve tercih algısını belirlemek amacıyla yapılmıştır. Çalışma kapsamında Silivri'de yaşayan ve TÜİK verilerine göre gruplandırılan 18-50 yaş aralığındaki 20 kişi ile yüz yüze anket uygulaması gerçekleştirilmiştir. Anket sonuçlarına göre panelistler %70 oranında köy yumurtasının daha sağlıklı olduğunu, gezen tavuk yumurtasının %35 oranında sağlıklı %35 oranında sağlıksız olduğunu, kafes yumurtasının ise %92 oranında sağlıksız bulduklarını açıklamışlardır. Bu durum satınalma tercihlerine de yansımaktadır. TÜİK verilerine göre gruplandırılan katılımcılarla, iki farklı araştırma alanında oluşturulan tadım ekipleri aracılığıyla, her biri iki tekerrür halinde olmak üzere duyusal değerlendirme çalışmaları gerçekleştirilmiştir. Katılımcılara, yumurta türlerinin üretim sistemleri belirtilerek ve ürünler kodlanarak duyusal analiz yaptırılmıştır. Her iki grupta da benzer sonuçlar elde edilmiştir. İlk aşamada, üretim sistemleri açıkça belirtilerek yapılan duyusal değerlendirmede; katılımcıların yaklaşık %71'i köy yumurtasını, %25'i gezen tavuk yumurtasını ve %4'ü kafes tavuğu yumurtasını tercih etmiştir. İkinci aşamada ise, üretim sistemlerine göre sınıflandırılmış yumurtalar (A1: köy yumurtası, A2: gezen tavuk yumurtası, A3: kafes yumurtası) rastgele kodlanarak katılımcılara sunulmuş ve herhangi bir üretim bilgisi verilmeden duyusal değerlendirme yaptırılmıştır. Kodlanmış ürünlerle yapılan duyusal analiz sonuçlarına göre, tat, görünüş, koku, renk ve dokusal özellikler bakımından yumurta türleri arasında istatistiksel olarak anlamlı bir fark tespit edilmemiştir (p> 0.05). Sonuç olarak, yumurta tüketiminde toplumun algısı ve şartlanmaları büyük önem taşımaktadır. Tüketiciler, tercihlerini genellikle algılarına, alışkanlıklarına ve kendilerine sunulan bilgilere göre şekillendirmektedir. Yetiştirme sistemleri, hayvan refahı ve benzeri unsurlar tüketici tercihlerinde belirgin bir etkiye sahip değildir. Bu nedenle, yumurtanın kaliteli ve erişilebilir bir protein kaynağı olduğuna dair doğru bilgilendirme yapılarak tüketim teşvik edilmelidir.

Eggs are considered a“reference protein”due to their balanced content of essential amino acids and fatty acids, and their biological value, which is close to that of breast milk. For individuals without allergic issues, eggs are a complete food source. This thesis research was conducted to determine egg consumption and preference perceptions in the Silivri district of Istanbul. Within the scope of the study, face-to-face surveys were conducted with 20 individuals aged 18-50, grouped according to Turkish Statistical Institute (TUIK) data and residing in Silivri. According to the survey results, 70% of the panelists stated that village eggs are healthier, while 35% considered free-range eggs healthy and 35% unhealthy, and 92% found caged eggs unhealthy. This perception is also reflected in their purchasing preferences. Sensory evaluation studies were carried out with tasting panels formed in two different research areas, with participants grouped according to TUIK data. Each sensory evaluation was conducted in two replicates. Participants were asked to perform sensory analyses of the egg types, with the production systems specified and the products coded. Similar results were obtained in both groups. In the first stage, where the production systems were clearly indicated, approximately 71% of participants preferred village eggs, 25% preferred free-range eggs, and 4% preferred caged eggs. In the second stage, eggs classified by production system (A1: village egg, A2: free-range egg, A3: caged egg) were randomly coded and presented to participants without any production information, and sensory evaluation was performed. According to the results of the sensory analysis with coded products, no statistically significant differences were found between the egg types in terms of taste, appearance, odor, color, and textural properties (p > 0.05). In conclusion, societal perceptions and conditioning play a significant role in egg consumption. Consumers generally shape their preferences based on their perceptions, habits, and the information presented to them. Production systems, animal welfare, and similar factors do not have a marked effect on consumer preferences. Therefore, accurate information should be provided to promote the consumption of eggs as a high-quality and accessible protein source.
