V ÖZET AHTAPOTUN {Octopus vulgaris, Curvier, 1797) DONDURARAK DEPOLAMA PERİYODUNDA KİMYASAL VE DUYUSAL KALİTE KARAKTERİSTİKLERİNDEKİ DEĞİŞİMLER ŞEN, Evren Burcu Yüksek Lisans Tezi, Su Ürünleri Avlama ve İşleme Teknolojisi Anabilim Dalı Tez Yöneticisi: Doç. Dr. Şükran ÇAKLI Ağustos, 2003, 51 sayfa Bu çalışmada kafadanbacaklılarm bir türü olan ahtapot {Octopus vugaris, Curvier, 1797)' un tentakül ve manto kısımları ayrılarak dondurulmuştur. Temizlendikten sonra dövülüp manto ve tentakülleri ayrılan ahtapotlar polietilen ambalajlarla paketlenip -40°C de dondurulmuştur. Daha sonra -18°C deki soğuk hava depolarına alınmıştır. -18° C'de depolanan dondurulmuş ahtapot tentaküllerinin ve mantolarının depolama başlangıcındaki besinsel kompozisyonları ve depolama süresince kalite karakteristiklerinde meydana gelen değişimlerinin tespiti amacıyla kimyasal kalite kontrol ( pH değeri, TVB-N, TBA, TMA-N, peroksit sayısı) ve duyusal (görünüş, doku, koku, lezzet) analizleri yapılmıştır. Kimyasal kalite kontrol analizlerinde 3 aylık depolama sonunda fark kaydedilmezken (p< 0,05), duyusal olarak 2. ve 3. aylarda 1. aydan daha düşük değerler tespit edilmiştir (p > 0,05).

vn ABSTRACT CHANGES m CHEMICAL AND SENSORIAL QUALITY CHARACTERISTICS IN OCTOPUS (Octopus vulgariSyCurvier, 1797) DURING THE FROZEN STORAGE PERIOD ŞEN, Evren Burcu Thesis of MSc, Department of Fisheries and Processing Technology SupervisonAssoc. Prof. Dr. Şükran Çaklı August, 2003, 51 pages In this study, a species of cephalopod octopus (Octopus vulgaris, Curvier, 1797) was frozen after their tentacles separeted from mantles. Octopuses were taken in boxes whith ice to factory. They were gutted, washed and softened and then mantles were separeted from the tentacles. Tentacles and mantles were packaged into plastic bags and then they were frozen at -40°C. Frozen tentacles and mantles bags were stored at -18°C. Before they were frozen their biochemical composition analyse had been done. Chemical quality control analyses such as pH, TBA, TVB-N, TMA-N and peroxide and sensory analyses about appearance,texture odour and taste quality analyse were done throughout the three months to observe to changes in quality characteristics during the frozen storage. There is no significant (p< 0,05) changes in chemical quality control analyses after three month frozen storage, but there is significant changes in sensory analyses.
