Özet

Bu araştırmada 88.15±2.38 g ağırlığa ulaşmış gökkuşağı alabalıkları materyal olarak kullanılmıştır. On haftalık besleme döneminde üretim teknolojileri ve içerikleri farklı olan üç tip ticari yem ile [pelet (C), ekstrude (B), ekspanded (A)] beslenmiştir. Alabalıklar temizlenip gerekli ölçümleri yapılarak büyüme performansı, kondüsyon faktörü (KF), viscerosomatik indeks (VSI), hepatosomatik indeks (HSI) ve fileto verimi (FV) hesaplanmış, kimyasal analizleri; pH, nem, yağ, kolesterol, toplam uçucu bazik-azot (TVB-N), tiyobarbutirik asit (TBA), serbest yağ asitliği (SYA) ve yağ asitleri dağılımı yapılmıştır. Bu işlemlerden sonra filetolar bireysel hızlı dondurucuda (IQF) -40oC'de tutularak dondurulmuş ve daha sonra -18 oC'lik derin dondurucuda depolanmıştır. Örneklerin 6 aylık donmuş depolama sürecinde 1'er aylık periyotlarda kimyasal (pH, TVB-N, TBA, serbest yağ asitliği ve yağ asitleri dağılımı) değişimleri incelenmiştir. In this study, rainbow trout attained the weight of 88.15±2.38 g were used as material. The rainbow trout were fed with three different types of commercial feeds [pelet (C), extrude (B), expanded (A)] which has different production technology and composition for a feeding period of ten weeks. At the end of the feeding period trout were de-boned and the growth performance, condition factor (CF), viscerosomatic index (VSI), hepatosomatic index (HSI) and fillet yield (FY) were measured and chemical analyses; pH, humidity, dry substances, fat, cholesterol, total volatile basic nitrogen (TVB-N), thiobarbyturic acid (TBA), free fat acidity and distribution of fatty acids were conducted. The trout fillets were frozen in an individual quick freezer (IQF) at -40oC and stored at -18oC in a deep-freezer. Chemical (pH, TVB-N, TBA, free fat acidity and distribution of fatty acids) changes in the samples were examined in every one-month during a 6-month frozen storage period. Furthermore, the samples were exposed to sensory analyses by a 7 member panel in each month of the storage.Results from the study indicated that the differences among the groups fed with different commercial feeds were insignificant (p>0.05) in term of FY %, and significant in terms of CF values that were observed to be lower in the group fed on C, VSI % and HSI % values. Additionally, the group fed on C, having relatively lower crude fat and metabolic energy, when compared to other groups. The distribution of fatty acids in the groups fed on A, B and C were respectively as follows: 23.78 %, 24.49 % and 26.71 % for saturated; 33.89 %, 41.10 %, and 38.80 % for monounsaturated; and 37.20 %, 34.44 % and 37.52 % for polyunsaturated fatty acids. The levels of eicosapentanoic acid (EPA) and docosahexanoik acid (DHA), which are very beneficial for health, were found to be higher (EPA 2.40 % and DHA 10.27 %) in the group fed on B in comparison to other experimental groups. The fatty acid profile of the rainbow trout fillets did not reflect the fatty acid profile of the diets. Antioxidants had a significant effect on the stability of fatty acids.
