Özet
Organik tarımın bir kolu olan organik meyve ve sebzecilik, ülkemizde henüz kısa sayılabilecek bir geçmişe sahiptir. Buna rağmen gerek üretim alanı ve miktarı, gerekse dış satım olanakları göz önünde bulundurulduğunda, organik tarımın diğer birçok kolu gibi oldukça gelecek vaat eden ve üzerinde hassasiyetle durulması ve geliştirilmesi gereken bir alan olduğu açıktır.Bu çalışmada öncelikle ülkemizde halen net olarak anlaşılmayan ve tartışma konusu olan ?organik tarım? kavramı üzerinde durularak, anlamı, hangi amaçlara yönelik gerçekleştirildiği ve ilkeleri açıklanacaktır. Sonrasında dünyada ve ülkemizde organik tarımın doğuşu ve günümüze kadar kat ettiği yol izlenecektir. Üreticilerin organik tarımı benimsemesinde etkili faktörler belirtilecek ve devamında ülkemizdeki organik meyve ve sebze sektörünün gözler önüne serilmesi amacıyla organik bitkisel ürünlerin talep durumu, üretim değerleri, ihracat ve ithalat durumumuz ortaya konulacaktır. Ayrıca tüm dünyadaki yerimizin belirlenebilmesi için dünyadaki üretim ve talep durumu ile dünya pazarının durumu da gözler önüne serilecektir. Araştırmanın bir diğer hedefi ise henüz gelişme döneminde bulunmasına rağmen çok büyük bir potansiyele sahip olduğunu belirttiğimiz ülkemizin organik tarım konusundaki mevcut sorunlarını belirterek bunlar için çözüm önerilerinde bulunmak, önerilen diğer çözümleri incelemek; organik tarımın yaygınlaştırılabilmesi ve ihracatımızın arttırılması için gerekli stratejileri ve alınması gereken önlemleri belirleyerek, geleceğe yönelik hedefleri göz önüne sermektir.Çalışmanın içeriğinde organik meyve ve sebze üretiminin basamakları açıklanacak, bunlara örneklik teşkil etmesi amacıyla organik kuru kayısı ve organik domates üretimine yer verilecektir.

Organic fruit and vegetable growing, a branch of organic agriculture, has a short history in our country. Nevertheless, it is clear that the branch is a hot prospect for the future and needs much attention and development if we are to consider its area and amount of production as well as the opportunity of exportation.In this project, after giving an explanation for the largely misunderstood concept of ?organic agriculture?; its meaning, aims, functions and principles will be scrutinized. Later, the birth and the progress it has hitherto made in our country and in the world will be put under question. The influential factors that encourage producers to take on organic agriculture will be mentioned, and afterwards, the demand status of vegetal products, their value of production, and our state of exportation and importation will be examined in order to give a better insight into the current situation of fruit and vegetable sector of our country. Moreover, to be able to determine our ranking in the whole world, there will be an emphasis on the worldwide ratings of production and demand as well as the world market, itself. Other aims of this research are to detect the problems related to organic agriculture in our country , which ,we have already mentioned to have a great potential despite having a recent entrance into the sector , to offer solutions for the problematic sides , to examine the other previously suggested solutions , and to come up with future strategies and precautions that will enable organic agriculture to be more widespread , and increase our rate of exportation , which will give us a chance to set our future expectations.In the content, the process of organic fruit and vegetable growing will be explained and in order to exemplify these, organic dried apricot and tomato production will be illustrated.
