Özet

Bursa yöresinde bütün halde satışa sunulan hindi ve tavuk karkaslarının Salmonella spp. ve E. coli O157:H7 bakımından kontaminasyon durumunu klasik metodlar ile belirlemek amacıyla yapılan bu çalışmada, çeşitli satış noktalarında tüketime sunulan 150 adet tavuk karkası ve 150 adet hindi karkası olmak üzere toplam 300 adet kanatlı eti örneği incelenmiştir. İncelenen 300 adet kanatlı eti numunesinin 8 adedi E.coli O157:H7 kontaminasyonu yönünden şüpheli kabul edilmiş ve yapılan doğrulama testleri sonucunda 8 adedinin de E.coli O157 olduğu tespit edilmiş, bu örneklerin hiçbirinde H7 antijeni tespit edilememiştir. 52 adedinde Salmonella izole ve identifiye edilmiştir. Buna göre toplam 300 adet kanatlı eti numunesindeki tespit edilen E.coli O157 oranı % 2,5 E.coli O 157:H7 oranı % 0 olarak tespit edilmiştir. Bu örneklerin hiçbirinde H7 antijeni tespit edilememiştir. Salmonella kontaminasyonu oranı da% 17,3 olarak tespit edilmiş olupgeriye kalan % 80,2 oranında bu iki patojen bakteriye rastlanmamıştır. Bu çalışmada 150 adet tavuk gövde eti numunesinden 5 adedinde (% 3,33) E.coli O157, 35 adedinde ise (% 23) Salmonella spp. tespit edilmiştir. 150 adet hindi gövde eti numunesinden 3 adedi (% 2) E.coli O157 olduğu, 17 adedinde ( % 11,3) Salmonella spp. tespit edilmiştir.

In the study conducted to detect the contamination state of turkey and chicken carcasses marketed around Bursa in terms of Salmonella spp. and E. coli O157:H7, 300 carcesses consisting of 150 chicken carcasses and 150 turkey carcasses available for sale in various points have been examined. 8 of 300 samples have been regarded as doubtful in terms of E.coli O157:H7 contamination and it has been confirmed through verification testing. H7 antigens have not been detected in any of the samples. Salmonella has been isolated and identified in 52 of the samples. Accordingly, E.coli O157 percentage detected in 300 samples is 2,5 % ; on the other hand, E.coli O 157:H7 percentage is 0 %. H7 antigens have not been detected in any of those samples. Salmonella contamination percentage has been identified as 17,3 % while no pathogen bacteria has been met in the rest of 80,2 % of the samples. In the study, in 5 (3,33 %) of chicken samples out of 150 E.coli O157, and in 35 (23 %) of them Salmonella spp. have been detected. In 3 ( 2 %) of 150 turkey samples E.coli O157 and in 17 (11,3 %) of them Salmonella spp have been detected.
