Özet
Bu çalışmada, kategorik veri analiz yöntemlerinden Log-linear analiz yönteminin teorik altyapısı incelenerek et tüketim tercihlerinin yorumlanmasında uygulanması amaçlanmıştır. Bu amaçla Isparta ilinde yaşayan insaların sosyo ekonomik yapılarını, hayvansal ürün tüketim davranışlarını ve tercihlerini belirlemek için 400 kişi üzerinde anket uygulanmıştır. Araştırmaya katılan tüketicilerin hanehalkı ortalama aylık giderleri 2312,77±1374,6 TL iken ortalama gıda harcamaları 674,37±442,9 TL idi. Isparta ilinde kişi başı aylık kırmızı et tüketimi 0,86±0,77 kg, kanatlı et tüketimi 0,89±0,85 kg ve balıketi tüketimi 0,71±0,65 kg olarak bulunmuştur. Tüketiciler kırmızı et çeşitleri arasında en çok sığır-dana etini (%66,8) tercih ederken koyun ve keçi eti tüketim oranları ise sırasıyla %55 ve %54,3 olarak tesbit edilmiştir. Kuyruk yağı tüketimi %20,5; sakatat tüketmi %46 idi. Kanatlı hayvan sakatatı tüketenlerin oranı ise %21,5 dir. Sucuk, salam, sosis gibi et ürünleri tüketenlerin oranı %76,3 olduğu gözlendi. Çalışmada ikiden çok değişken arasındaki ilişki ki-kare testi ile değerlendirildiğinde çok sayıda test yapmak gerekirken (3 değişken için 3, 4 değişken için 6 ayrı ki-kare testi) log-linear analiz yöntemi ile tek bir analizle değişkenler arasındaki ilişki yapısı ortaya koyulabilmiştir. Ayrıca değişken sayısının artmasıyla birlikte yüksek dereceden etkileşimlerin önemliliği de log-linear analiz yöntemi ile test edilebilmiştir. Log-linear analiz sonucu değerlendirmelerine göre cinsiyet ile koyun ve keçi eti tüketimi arasında; kırmızı et tüketimi ile gelir, et fiyatı, gıda harcama miktarı ve yaş arasında; ailedeki fert sayısı ile kırmızı ve kanatlı et tüketimi arasında; cinsiyet ile kuyruk yağı tüketimi arasındaki ilişkiler önemli bulunmuştur(P

In this study, the choices of meat consumption was aimed to be interpreted through examining the theoretical basis of log-linear analysis that is a method in categorical data analysis. In this regard, a questionnaire survey was conducted among 400 people to explain issues related to topics of the socio-economical situation of those who live in the Isparta province and their status of animal product consumptions and preferences. The average monthly expense for those consumers who have participated in the research is 2312,77±1374,6 TL and the average food expense is 674,37±442,9 TL per family. We calculated that the red meat consumption of person per month is 0,86±0,77 kg, the poultry consumption is 0,89±0,85 kg and fish consumption as 0,71±0,65 kg in Isparta provinve. While the consumer who prefer beef-veal (66,8%) among the other choices of sheep and goat meals which were found to be consumed as 55% and 54,3% respectively.The consumption of suet is 20,5% and offal consumption was 46%. The percentage of consuming poultry offal was 21,5%. It has further been found that those consuming sujuk, salami and sausage was 76,3%. While various tests needed to be done in order to evaluate the relationship between more than two variables through chi-quare test (for 3 variables 3 and for 4 variables there needs to be 6 different chi-square tests), the structure of relationship between the variables has been revealed through a single computation of the log-linear analysis. In addition, the significance of high degree interaction with the increasing number of variables were able to be tested through log-linear analysis.
