Özet
Gıda işletmelerinde diğer alanlarda faaliyet gösteren işletmeler gibi en düşük maliyetle en yüksek karlılığı sağlamak amaçlanmaktadır. Küreselleşmenin büyük etkisiyle tüketicilerin gıda ürünlerine olan talep ve ihtiyaçları sürekli bir artış göstermektedir. İşletmeler bu talebi en etkin bir şekilde karşılamak için çeşitli stratejiler geliştirmektedir. Özellikle gıda sektöründe faaliyet gösteren işletmeler için lojistik süreçleri oldukça önem arz etmektedir. Gerek gıda ürünlerinin insan sağlığını tehdit etmeyecek şekilde gerekse müşterilere tam zamanında ulaştırılabilmesi açısından lojistik süreçlere önem verilmektedir. Gıda işletmelerinin bu önemli konudaki mevcut durumunu görmek, değerlendirmek ve daha sonraki dönemler için oluşturacakları stratejileri belirmek için lojistik performanslarının mevcut durumunu görmeleri önemlidir. Bu çalışmada Konya ilinde üretim yapan bir şekerleme ve çikolata işletmesinin lojistik performans değerlendirilmesi yapılmıştır. Çalışmanın amacını oluşturan ve işletme yöneticisine yöneltilen sorular sonucunda mevcut durum incelenmiştir. Çalışma sonucunda işletmelerin üçüncü parti lojistik hizmet sağlayıcılarından lojistik hizmeti almalarının avantajlı olacağı önerisi verilmektedir.

In the food industry, businesses are aimed to provide the highest profitability with the lowest cost, like businesses operating in other industries. With the great effect of globalization, the demand and needs of consumers for food products are constantly increasing. Businesses develop various strategies to meet this demand in the most effective way. Logistics processes are very important especially for businesses operating in the food sector. Logistics processes are given importance in terms of delivering food products to customers in a way that does not threaten human health and on time. It is important for food businesses to see the current status of their logistics performance in order to see and evaluate the current situation in this important issue and to determine the strategies they will create for the next periods. This study examined logistics performance status in the scope of questionnaire study on confectionery and chocolate business in Konya province. As a result of the questions posed to the deputy general manager, which constitutes the purpose of the study, the current situation has been examined. As a result of the study, it is suggested that it would be advantageous for businesses to outsource logistics services from third-party logistics service providers.
