ÖZET Doktora Tezi FARKLI SICAKLIKLARDA MUHAFAZA EDİLEN TEREYAĞININ RAF ÖMRÜ ÜZERİNE ÇEŞİTLİ ANTİOKSİDANLARIN (a-TOKOFEROL, BMA, BUT) ETKİSİ Suzan ÖZTÜRK Atatürk Üniversitesi Fen Bilimleri Enstitüsü Gıda Mühendisliği Anabilim Dalı Danışman : Prof. Dr. Songül ÇAKMAKÇI Bu araştırmada tereyağında bozulma sonucu oluşan acılığın (oksit tat) önlenmesi, böylece tereyağı kalitesinin korunması ve raf ömrünün artırılması, dolayısıyla tüketici sağlığının korunması ve ekonomik yararlar sağlanması amaçlanmıştır. Bunun için tereyağlım üretimden hemen sonra 3 farklı antioksidan (BMA, BUT ve u-tokoferol), kontrole karşı 2 farklı düzeyde (50 ppm ve İÜÜ ppm) katılmış ve tereyağı örnekleri 2 farklı sıcaklıkta (4±2°C ve -20±2 °C) karanlıkta 6 ay süreyle depolanmıştır. Muhafazanın 2, 30, 60, 90, 120, 150 ve 180. günlerinde antioksidanların harcanma oranları ve tereyağının kalitesi çeşitli kimyasal ve duyusal analizlerle belirlenmiştir. Antioksidan çeşidinin TBA sayısı, peroksit sayısı, asit değeri ve antioksidan kalıntı miktarı üzerine, depolama sıcaklığı ve depolama süresinin ise TBA sayısı, peroksit sayısı, asit değeri, asitlik derecesi, pH değeri, iyot sayısı, antioksidan kalıntı oranı ile renk, tekstür, koku, tat ve aroma, yabancı tat ve aroma, acılık ve genel kabul edilebilirlik puanları üzerine istatistiki olarak çok önemli derecede etkili (p<0.01) olduğu saptanmıştır. Dolayısıyla BMA, BHT ve a-tokoferol katılmasının bu kriterler açısından tereyağına olumlu yönde etki ettiği belirlenmiştir. 180 gün depolama sonunda en düşük ortalama TBA ve peroksit sayıları 100 ppm BHT, en düşük ortalama asit değerleri ise 100 ppm BHA katılan tereyağlarında -20±2°C'de muhafaza ile, en kötü sonuçlar ise 4+2°C,de depolanan kontrol grubu tereyağı örneklerinde belirlenmiştir.En yüksek kalıntı miktarları her iki seviyede de (50 ve 100 ppm) sırasıyla a-tokoferol, BHA ve BHT'de saptanmıştır. Ancak tereyağı muhtemelen tekniğine uygun olarak üretildiği ve uygun sıcaklıklarda depolandığı için kontrol grubu örneklerin de iyi korunduğu belirlenmiştir. Sonuç olarak, tereyağına 100 ppm oranında antioksidan ilavesi 50 ppm'e göre daha iyi sonuçlar vermiş, bu seviyeler, 180 günlük depolama süresince tereyağlarını kaliteli olarak muhafaza etmiş ve bir miktar antioksidan da artmıştır. Bu süre için 50 ppm oranında katkılamanın yeterli olacağı, hatta daha düşük seviyede katkılama yapılabileceği; veya bu miktarlarla tereyağlarının daha uzun süre depolanabileceği anlaşılmıştır. Ayrıca, -20±2°C'de depolamanın daha iyi sonuçlar verdiği, ancak depolama sıcaklığı olarak hem -20±2 °C hem de 4±2°C'nin uygun olacağı sonucuna varılmıştır. Ancak 180 gün için 4±2°C'nin yeterli ve daha ekonomik olacağı, daha uzun süreli depolamalar içinse 100 ppm seviyesinin ve -20±2°C'de muhafazanın daha uygun olacağı sonucuna varılmıştır. 2002, 133 sayfa

ABSTRACT Ph. D. Thesis THE EFFECT OF VARIED ANTIOXIDANTS (a-TOCOPHEROL. BHA. BUT) ON THE SHELF LIFE OF BUTTER STORED AT DIFFERENT TEMPERATURES Suzan ÖZTÜRK Atatürk University Graduate School of Natural Applied Sciences Department of Food Kngeneering Supervisor : Prof. Dr. Songül ÇAKMAKÇI The aim of the study was to prevent rancidity that occur in result of deterioration to maintain the quality of butter and to extend shelf-life storage which will help for protecting of human health and to supply with economical benefits. In this study three different antioxidants (BHA, BHT and a-tocopherol) were added to the butter samples at three different concentrations (0, 50 and 100 ppm) and then kept in dark condition at two different temperatures (4±2°C and -20±2°C) for 6 months. Decreasing rates of antioxidants and the butter quality were examined on 2, 30, 60, 90, 120, 150 and 180 days of storage period according to varied sensory and chemical properties. The effect of antioxidant treatments were found to be significant (p<0.0l) on TBA number, peroxide value, free fatty acids content (FFA) and the residue rates of antioxidants. For both storage temperature and storage time had significant effect (p 0.01) on the TBA number, peroxide value, acid value, residue rate, pi I value, acidity, iodide number and odor, texture, taste and aroma, undesirable taste and aroma, rancidity, and general acceptable score. Thus, addition of BHA, BHT and a-tocopherol into the butter provided positive effect in terms of the criteria mantioned above. After 1 80 days storage period, the lowest averageTBA number and peroxide value were determined 100 ppm BHT added butter samples; whereas the lowest avarage acidity values were determined in 100 ppm BHA added samples which were held at -20±2°C. On the other hand the worst values according to the criteria listed above were obtained from control samples kept at 4±2°C However, samples in control were determined well conserved due to production in proper techniques and kept suitable storage temperatures. As a result addition of 100 ppm antioxidant into the butter samples gave better result compared to 50 ppm. Both levels helped to stay high quality of butter during 180 days of storage period, even a little antioxidants have remained in butter samples. The higest levels of residue values were determined in the butter samples with both 50 and 100 ppm a-tocopherol, BHA and BHT respectively. Therefore, our results indicated that 50 ppm level or less doses of these antioxidants are adequate to protect butter samples for 1 80 days or a longer time. Furthermore, storage temperature at -20±2°C or 4±2°C were found to be acceptable for butter samples, but 180 days or a longer storage period at 4±2°C may be more economic. Finally, it can be recommended that 1 00 ppm antioxidant level and -20±2°C storage temperature may be more suitable for a longer period than 1 ?0 days for butter storage. 2002, 133 pages
