The importance of the germination process is increasingly growing due to its cost-effective ability to enhance the technological properties of foods. The objective of this thesis are to improve the nutritional value of chickpeas (Cicer arietinum), which have a high production potential in our country, through germination and to determine the functional, nutritional, and certain quality characteristics of kefir produced with the addition of germinated chickpeas. This study was conducted in two phases. In the optimization phase, the germination temperature of chickpeas was set at 25-30°C, the soaking time at 12-24 hours, and the germination duration at 48-72-96 hours. Two control groups and 12 germinated chickpea (ÇN) groups were formed. Protein, moisture, ash, and total phenolic content analyses were conducted on the chickpea groups, and the optimal group was determined through principal component analysis (PCA). In the second phase, non-germinated chickpeas, inulin, and the optimal ÇN were added to kefir at concentrations of 0,5%, 1%, and 2%. As a result, a total of 10 groups were formed, including control kefir (K), control kefir with non-germinated chickpea addition (NK), kefir with inulin addition (IK), and kefir with germinated chickpea addition (ÇNK). The kefir groups were stored at 4±1°C for seven days, and on days 1 and 7 of storage, various analyses were conducted, including serum separation, pH determination, titratable acidity, water-soluble dry matter content, total phenolic content, antioxidant activity (DPPH method), mineral composition, microbiological evaluation, and sensory analysis. The experiments were conducted in two replicates with three parallels. As a result of germination, the highest protein content (14,99%) and total phenolic content (9,05 mg GAE/g) were found in the ÇN-8 group (soaked for 12 hours at 30°C and germinated for 72 hours). Based on the PCA results, this group was determined to be the optimal group. The pH values of the kefir groups were found to be in the range of 4,01-4,75 (p<0,05). As the proportion of germinated chickpeas (ÇN) added to kefir increased, the total phenolic content also increased, with the highest value observed in the GCK-2 group (341,12 mg GAE/100 mL) (p<0,05). Among the kefir groups, IK-0,5 exhibited the highest antioxidant activity (1,54 mg/100 mL), and the differences between the groups were statistically significant (p<0,05). According to microbiological analysis results, the lactic acid bacteria (LAB) count was 8,36 log CFU/mL in the GCK-1 group, while it was 8.61 log CFU/mL in the IK-1 group (p<0,05). Yeast was not detected in the K and IK groups but was found to be 4,54 log CFU/mL in the ÇNK-1 group (p<0,05). Based on PCA, the ÇNK-1 group was determined to have the most superior characteristics compared to the other groups. In conclusion, kefir supplemented with germinated chickpeas has the potential to contribute to consumer health as a functional beverage due to its prebiotic properties. Additionally, with improvements in sensory attributes, it holds promise for pilot-scale product development and adaptation in the food industry.
